This year we were super excited to be able to offer coffee from our friends over at Fazenda Ambiental Forteleza.
Almost a decade ago now I had the privilege of working alongside Filipe Croce at the pre-eminent Seven Seeds, as well as welcoming the first lots of coffee to Melbourne via Silo, a now defunct coffee co-op/importer, tasting coffees that were scoring many points higher than the world thought was possible for Brazilian coffees.
What Filipe, Marcos & Silvia have been able to accomplish is nothing short of inspiring. Not only have they lifted the bar for Brazilian coffees, they promote & practice sustainable practices environmentally, socially & agronomically.
This coffee is from a group of farmers the team at FAF, via the bob-o-link project, have been working with since 2008 in the Serra do Cigano Valley.
MILK CHOCOLATE, CHERRY, ORANGE, ROSE
We like to brew this as espresso at a ratio of 1:2.5, the slightly longer pour balancing out the coffee and allowing the aromatics to shine. It's also super tasty in a French Press...
